Recipe: Cranberry Pecan Bars

My mom received a framed copy of this recipe years ago from an old friend. Whenever she needs or wants to bake some holiday treats, she’ll make a batch of these bars. They’re sweet, tart, and yummy all at the same time. Enjoy!

Crust:   Topping:
½ cup soft butter 1 cup chopped cranberries
2 teaspoons vanilla  ½ cup coconut
2 tablespoons sugar  ½ cup chopped pecans
1 cup flour  2 tablespoons flour
½ cup chopped pecans grated rind of one orange
    2 cups sugar  
    3 egg yolks  
    1/3 cup cream  
  1. Preheat oven to 350°.
  2. Mix crust ingredients together until crumbly. Press into pan. Bake 10 minutes, until light brown.
  3. Mix topping ingredients together. Pour over crust. Bake 30-40 minutes.
Makes about 18 servings in a 9′ x 13′ pan.
